Bhindi masala, kurkuri bhindi, bharwan bhindi – give us bhindi in any form and we love it all. Bhindi is one of the most cooked sabzis in north Indian households, whereas in Rajasthan, it is cooked with a slight variation. Besani bhindi is a popular Rajasthani delicacy that is served as a side dish with roti-sabzi combo or with dal-rice combo. Bhindi is at its best when it’s crisp – this besan wali bhindi ensures to retain the characteristic of bhindi, which makes it so popular.

Bhindi is coated with roasted besan (chickpea flour or gram flour) mixed with some common Indian spices. This recipe has no onions, no tomatoes, also no garlic and ginger. So without any heavy chopping, this bhindi sabzi is very easy and simple to make. The only preparation required is of washing and drying the bhindi properly. Bhindi should be completely dried out of its water content before cutting or coking it. Once you have you bhindi ready, rest of the process is quick and smooth.

Bhindi is one of the most commonly used vegetables in Indian households. 

Easy Besani Bhindi Recipe:

Ingredients –

250 gm bhindi

2 tbsp besan

Half tsp cumin seeds

Half tsp turmeric powder

1 tsp amchur powder

1 tsp coriander powder

Juice of half a lemon

Salt to taste

Red chilli powder to taste

A pinch of asafoetida (hing)

Method:

Step 1 – Wash and pat dry the bhindi completely. With a knife, make some gashes in the bhindi without cutting it completely.

Step 2 – In a pan, heat oil or ghee and stir fry the bhindi till it is almost cooked. Take out the bhindi and keep it aside.

Step 3 – In the same pan, add more oil if required. Add hing and cumin seeds, when the cumin starts to splutter, add besan and roast it till it turns brown and releases its aroma.

Step 4 – Add salt, red chilli powder, coriander powder and turmeric powder, and saute for a minute.

Step 5 – Add back the sauteed bhindi and amchur powder, and mix well till all the bhindi is well-coated with spiced besan mix.

Step 6 – Cover the pan and let the bhindi cook completely. Add a splash of water if required. Squeeze lemon juice over the bhindi before serving.
